A hearty smoked tomato ragù, fresh mafaldine pasta and house made straciatella with fresh basil.
Serving For Two People

— 300g Mafaldine
— 400g Smoked Tomato Ragù
— 80g Straciatella
— Fresh Basil
Instructions
1) Bring a pot of salted water to a boil. Cook pasta for 2-3 minutes.
2) Heat your tomato ragu in a sauce pan over medium heat until simmering.
3) Transfer pasta to sauce pan and toss until evenly coated. Salt to taste, and add a little butter for richness (optional).
4) Plate in two bowls and top with a dollop of stracciatella and fresh basil leaves. Finish stracciatella with a touch of olive oil and salt.
