Adernats Cava "Brut Nature" - Tarragona, Spain
The history of the Adernats winery could serve as a Steinbeck novel or a Billy Bragg song. In the early 1920s, the grape farmers of the village of Nulles decided to combine their efforts and collectively built a gorgeous parabolic wine cathedral to serve as their production facility. One hundred years later, they're still thriving as a cooperative and have obtained organic certification for all of their vineyards.
Just southwest of Barcelona, this is Cava country and the coastal influence lends an irresistible vibrancy to the bubbly wines grown here. This juicy sparkler is simultaneously very dry, wonderfully harmonious and brimming with fruit, each bead of effervescence a harbinger of springtime's imminence.
