"Los Frailes" references the Jesuit Friars that once called this estate home... but that was 250 years ago, and since then 13 generations of the Velázquez family have served as the custodians of the land. Today, the vineyard work is carried out according to organic and biodynamic principles and the winemaking is confidently minimalist. The Monastrell grape rules here (the French call it "Mourvèdre"), and the current generation has a rare talent for coaxing playful, juicy qualities from it. Brooding dark fruit tones expectedly dominate while textural buoyancy offers an exuberant counterpoint to rich, umami-driven dishes—like the September pasta features that you're about to experience!
