Zucchini & Sweet Pea Pesto Mafaldine

A bright and delicious pesto using zucchini, sweet peas, lemon, olive oil, pecorino romano, basil and mint. Toss this with mafaldine and top with fresh stracciatella (a creamy mozza usually found in burrata).

Serving For Two People

— 300g Mafaldine
— 250g Zucchini & Sweet Pea Pesto
— 80g Stracciatella
— 10g Roasted Pumpkin Seeds

Instructions

1) Bring a pot of salted water to a boil. Cook pasta for 2-3 minutes.

2) Transfer cooked pasta to a large mixing bowl with a 1/4 cup of pasta water. Add pesto and toss until evenly coated.

3) Plate into two bowls and top with stracciatella. Garnish with roasted lemon pepper pumpkin seeds.
