Sweet Corn & Bacon XO Rigatoni

Inspired by Mexican Street Corn, this Rigatoni dish uses a Sweet Corn Emulsion, Queso Fresco, charred corn kernels and a Bacon “XO” Sauce.

Serving For Two People

— 300g Fresh Rigatoni
— 250g Sweet Corn Emulsion
— 100g Bacon "XO" Sauce with Charred Corn
— 40g Queso Fresco

Instructions

1) Bring a pot of salted water to a boil. Cook pasta for 3 minutes.

2) Heat Bacon XO Sauce by floating container in boiling water.

3) Heat Sweet Corn Emulsion separately in a sauce pan until simmering.

4) Transfer cooked pasta to sauce pan, add 1 tablespoon of pasta water. Salt to taste.

5) Plate in 2 bowls. Drizzle XO sauce over pasta and finish with Queso Fresco.
