One of our favourite Roman dishes, Spaghetti Alla Gricia is a simple pasta focused on simple ingredients – Pecorino Romano, Guanciale and Black Pepper. We’ve emulified a toasted black pepper and pecorino sauce to be finished a ground guanciale crumb. This pasta is best eaten shortly after plating!

Serving For Two People

— 300g Spaghetti 
— 250g Pecorino Sauce
— 50g Ground Guanciale 

Instructions

1) Bring a pot of water to a boil.

2) Cook pasta for 3 minutes.

3) Warm sauce over low heat until simmering - DO NOT REDUCE.

4) Toss pasta with sauce with a spoonful of pasta water. Pasta should be evenly coated, not runny.

5) Plate in two bowls. Finish with toasted guanciale crumb. Eat while still hot.
