Spaghetti Cacciatore
Cacciatore, meaning “Hunter Style” is such a delicious Italian staple originating back to the Renaissance period. Traditionally using rustic foraged ingredients, this Cacciatore dish features a slow cooked chicken ragù finished with a herbed green “sala verde” of parsley, mint, garlic, anchovy, basil and lemon.
Serving For Two People— 300g Spaghetti
— 450g Chicken Cacciatore
— 50g Salsa Verde
— 30g Ground Pecorino Romano
Instructions
1) Bring a pot of water to a boil.
2) Add Chicken Cacciatore to a sauce pan and heat until simmering.
3) Cook pasta for 3 minutes then transfer to sauce pan. Add a spoonful of pasta water and toss until evenly coated. (add a tablespoon of butter for extra richness)
4) Plate in two bowls and finish generously with Salsa Verde and Pecorino Romano.
