Originating in Tuscany – Ubriachi, or “Drunken” sauce, is a robust, savory sauce crafted by simmering red wine with garlic, olive oil, chilies, tomatoes, ground pancetta, and vegetable stock. Though it won’t intoxicate, the bold wine notes and rich pancetta deliver a deep, umami-packed flavor.

Serving For Two People

— 300g Mezzi Rigatoni 
— 450g Ubriachi Sauce 
— 30g Toasted Pecorino & Parsley Crumble

Instructions

1) Bring a pot of water to a boil.

2) Add Ubriachi sauce to a pan and bring to a simmer.

3) Cook pasta for 3 minutes then transfer to sauce pan. Allow to reduce and toss until coated evenly.

4) Plate in two bowls and finish with toasted pecorino & parsley crumble.
