Mafaldine Sugo Finto
Sugo Finto or "fake sauce" packs a flavour that is anything but fake. This Tuscan vegetable-based ragù is full of richness and texture, made with a slow cooked soffritto, butter, cream, tomatoes, Grana Padano rinds, and chilies. Served with a broad bronze die Mafaldine pasta and finished with grated Grana Padano & basil oil.
Serving For Two People
– 330g Mafaldine
- 500ml Sugo Finto
– 40g Grana Padano
– Herb basil oil
Instructions
1) Bring a pot of salted water to a boil. Cook pasta for 3-4 minutes.
2) In a sauce pan, heat sauce until simmering.
3) Add cooked pasta along with a couple spoonfuls of pasta water. Allow to reduce.
4) Toss and plate. Finish with heaping amounts of grated Grana Padano and basil oil.
