A super fun pasta using fresh radiatore, toasted fennel, chicken sausage, castelvetrano olives, parmesan spuma and fresh mint. Great summertime flavours!
Serving For Two People
— 300g Fresh Radiatore
— 400g Chicken & Fennel Ragù
— 80g Parmigiano Spuma
— Fresh mint leaves
Instructions
1) Bring a pot of salted water to a boil. Cook pasta for 3-4 minutes.
2) Heat ragù in a sauce pan over medium heat until simmering.
3) Transfer cooked pasta to sauce pan, add 1 tablespoon of pasta water. Salt to taste
4) Allow sauce to thicken for 1-2 minutes.
5) Plate in 2 bowls. Finish with a dollop of parmigiano spuma and torn mint leaves.
