Like many whose origins are relatively obscure, this dry and toothsome rosé is delightfully eccentric and utterly compelling. The underappreciated Tannat grape makes its second Pasta Club appearance here, this time combined with the ubiquitous Cabernet Sauvignon to bombastic effect. While many pink wines offer mere refreshment, this one crept down from the Pyrenées foothills to demonstrate its gastronomic potential by flattering Chef Chrapchynski's brilliant creations.
