Casarecce Alla Trapanese

We're serving Summertime with this Sicilian pesto, using sun dried tomatoes, toasted almonds, Calabrian chilies, extra virgin olive oil, Grana Padano and a whipped lemon ricotta! Casarecce is the perfect pasta for this full flavour pesto. 

Serving For Two People

— 300g Fresh Casarecce
— 225g Pesto Alla Trapanese
— 140g Lemon Ricotta
— Fresh basil leaves

Instructions

1) Bring a pot of salted water to a boil. Cook pasta for 3-4 minutes.

2) Strain pasta, saving a 3/4 cup of pasta water. 

3) Combine the cooked pasta and pesto in your pot. Stir in hot pasta water until pesto is a creamy texture and fully coats your pasta.

4) Plate into two large bowls. Top with whipped lemon ricotta and fresh basil.
