Canederli is a Northern Italian dish using bread dumplings poached in a brodo. Our Canederli are made with bread, milk, Grana Padano, spinach, onion, nutmeg, black pepper and whole eggs. Poach them in a rich porcini & parmigiano brodo, and finish with pickled & marinated mushrooms (mushroom sott’olio) for a flavourful umami and hearty dish.
Serving For Two People
— 400g Canederli
— 400g Porcini & Parmigiano Brodo
— 80g Mushroom Sott'olio
— 40g Grana Padano
Instructions
1) Bring brodo to a simmer in a small pot, over medium heat. Do not reduce.
2) Gently add canederli to the pot and submerge in liquid. Cover for 6-8 minutes until dumplings are heated throughout.
3) Bring mushroom sott’olio to room temperature or warm in a pan over low heat.
4) Carefully ladle canederli into two bowls and pour remaining brodo into each bowl. Top with mushroom sott’olio and Grana Padano cheese.
