Rotolo, like a rolled lasagna, filled with whipped ricotta and squash finished with a brown butter sage sauce. Beautiful!

Serving For Two People

— 750g Rotolo
— Sage Butter
— Fresh Sage
— 40g Grana Padano


1) Preheat oven to 400 degrees. Heat a non-stick pan over medium-high heat with some cooking oil.

2) Carefully add Rotolo pieces to the pan. Allow to sear until browned on one side.

3) Turn over rotolo pieces to the other side and add butter. Place pan in the oven for 5 minutes.

4) Remove pan from oven and sage leaves to hot butter. Allow to crisp for 1 minute. 

5) Plate rotolo on two plates with butter and sage. Finish by grating Grana Padano.
