Fresh from the "Corn Capital of Canada" we are making a beautiful seasonal Taber Corn pasta with smoked butter and locally cured bacon.
Serving For Two People
– 350g Creste Di Gallo pasta
- 250g Sautéed Taber Corn & Smoked Butter
– 120g Crisp Rendered Bacon
– 40g Ground Grana Padano
Instructions
1) Bring a pot of salted water to a boil. Cook pasta for 3-4 minutes.
2) In a sauce pan, heat smoked butter and corn until simmering.
3) Add cooked pasta along with a couple spoonfuls of pasta water. Allow to reduce.
4) Toss with bacon and plate into two large pasta bowls. Finish with Grana Padano cheese.
