Ziti Al Forno

Ziti Al Forno - Baked Ziti, is a simple and hearty pasta using short tube pasta baked in the oven with cheese and sauce. For our Ziti Al Forno we are using our house Pomodoro sauce made from whole San Marzano tomatoes and cooked with garlic, chillies, and white wine.

Ingredients:

400mL pomodoro sauce
5g fresh minced garlic
2g (a pinch) crushed chili flake, or more if you like heat
45mL dry white wine
Cooking oil
100g fresh ricotta
Fresh ziti, cooked al dente
150g grated provolone

For Pomodoro:

798ml San Marzano Tomatoes
100ml Olive Oil
20g Fresh Basil Leaves
Salt to taste

Use one large can of whole San Marzano tomatoes. Hand crush the tomato, put into a medium sauce pot. Add olive oil, salt and whole basil. Simmer on low heat for approximately an hour, reducing slightly. Once cooked out, puree in a blender until smooth.

Method:

Preheat oven to 375º. In a medium pan, sweat 5g crushed garlic with 2g crushed chili flake in a small amount of cooking oil. Deglaze with a splash of white wine. Add 400mL of Pomodoro. Bring up to a simmer, careful not to scald. Add 100g of ricotta, mixing together thoroughly. Add in cooked ziti, gently toss together. Transfer ziti to a casserole or baking dish. Top with grated Provolone. Bake for 10-15 minutes until the cheese is golden brown.
